Thai Fried Rice with Shrimp Recipe


Thai fried rice is spicier than it’s Chinese counterpart and shrimp is always a good addition.


Ingredients:

2 Tbsp. Fish Sauce

1/2 tsp. Shrimp Paste

2 Tbsp. Soy Sauce

1 tsp. Sugar

Pinch Black Pepper

2 tsp. Chili Sauce

1/4 Cup Onion, minced

4 Garlic Cloves, minced

4 Tbsp. White Cooking Wine

12 medium Shrimp, peeled and devained

2 Eggs, beaten

4 Cups Rice, cooked

1/2 Cup Cashews

1/2 Cup Frozen Peas

3 Green Onions, sliced


In a small bowl, mix the fish sauce, shrimp paste, soy sauce, sugar, pepper, and chili sauce and set aside.


In a wok over medium-high heat, add 2 Tbsp. of oil, the onions, and garlic and stir-fry for 1 minute.  Add the wine and stir-fry for another 2 minutes.


Add the shrimp and stir-fry for another 3 minutes, until they turned pink.  Push the shrimp to the side of the wok and add a few more tsp. of oil and the beaten eggs, scrambling the eggs for 1 minute.


Add the rice, cashews, and peas and pour the sauce on top.  Toss the rice and stir-fry for 3 minutes.  Taste the rice, and salt or add a bit more fish sauce if desired, and then remove from the heat.


Serve with cucumber slices, sprinkling on top green onions.
