Thai Fried Rice with Chicken Recipe


This is a delicious and colorful meal.


Ingredients:

Oil

1/4 Cup Onion, sliced

1 1/2 tsp. Garlic, finely chopped

1/3 Cup Chicken, bite size pieces

1 Cup Jasmine Rice, cooked

1/3 Cup Tomatoes, diced

1 Egg

1/4 tsp. Golden Mountain Soy Sauce

1/2 tsp. White Soy Sauce

1/2 tsp. Salt

1/4 tsp. White Sugar

2 Tbsp. Scallions, chopped

1/8 tsp. White Pepper Powder

Cilantro, for garnish

Lime Wedge, for garnish

Cucumber, sliced, for garnish


Directions:

In a wok over high heat, add the oil and once hot add the onion.  Stir-fry well until it’s soft then add the garlic.  When the garlic is slightly browned add the chicken and stir-fry until the chicken is white on all sides.


Add the rice and tomatoes and continue to stir-fry mixing well.  Push the rice to the side of the wok and add a bit more oil, crack the egg and mix it in the wok, let it sit, and once solid, flip on top of the rice, mixing well.


Add the soy sauces, salt, and sugar, and then turn off the heat.  Add half of the scallions and the white pepper powder, mixing well.


Add to a plate and garnish the remaining scallions, cilantro, lime wedge and cucumber slices.
