Thai Coconut Soup with Tofu Recipe
Here’s a great vegetarian friendly soup, and definitely exotic.
Ingredients:
1 Tbsp. Olive Oil
3 Garlic Cloves, minced
1 Cup Shiitake Mushrooms, sliced
1 Carrot, thinly sliced
1/2 Red Onion, sliced
1 (12 oz.) can Coconut Milk
1 1/2 Cups Vegetable Broth
2 small Red Chili Peppers, minced
5 (1”) Slices Lemongrass
5 Thin Slices Ginger
Juice from 1 Lime
1 (16 oz.) package Tofu, cut into 1” cubes
2 Tbsp. Fresh Cilantro, chopped
Ingredients:
In a large pot, sauté the garlic, mushrooms, carrots, and onion in the olive oil for 3 minutes.
Reduce the heat to low, and add the coconut milk, vegetable broth, red pepper, lemongrass, ginger, limejuice, and tofu. Let it simmer for 15 minutes, then stir in the cilantro.
