Thai Basil Rolls Recipe


These rolls with shrimp, pork, and basil are absolutely delicious.


Ingredients:

1/4 lb. medium Shrimp

1/4 lb. Pork Loin

1/2 (8 oz.) package Rice Noodles

6 round Rice Wrapper Sheets

1/2 bunch Fresh Thai Basil, leaves picked from stems

1/2 Cup Fresh Cilantro, chopped

1/2 Cup Fresh Mint, chopped

1 Cup Bean Sprouts

1/2 Cup Hoisin Sauce

1 1/2 tsp. Creamy Peanut Butter

1 1/2 tsp. Water

Roasted Peanuts, chopped


Directions:

In a medium pot, bring lightly salted water to a low boil.  Cook the shrimp for 3 minutes, drain them, and let them cool on a paper towel.  Peel them, devain them, and slice them in half.


Bring another pot with lightly salted water to a boil and cook the pork for 10 minutes, and then allow it to cook, and slice it into thin strips.


Bring the last pot to boil water, and cook the noodles for 7 to 8 minutes, stirring occasionally.  Strain and rinse the noodles, this prevents them sticking together.


In a medium bowl filled with warm water, dip each of the wrappers for 30 seconds, until they are soft and flexible.  Lay each wrapper on a flat surface; add 2 basil leaves to the center, side by side, lay 4 or 5 shrimp halves on top of the basil, a small amount of pork, and a small amount of noodles.  Sprinkle on the mint, cilantro, and bean sprouts.  Starting at one end, roll the wrapper over once, then fold both sides towards the center, and continue rolling, until it’s tightly rolled up.


Warm the hoisin sauce, water, and peanut butter in a saucepan over medium-high heat.  Bring it to a boil, and immediately remove from the heat.  Garnish the sauce with chopped peanuts, and serve with the rolls as a dipping sauce.
