Spicy Basil with Tofu Recipe


This is a great vegetarian/vegan dish, always a favorite at our house.


Ingredients:

1/4 Cup Vegetable Oil

1 Bunch Holy Basil Leaves

1 Block Tofu

1/4 Cup Shallots

3 Tbsp. Garlic, finely minced

3 Tbsp. Fresh Thai Chili, finely minced

1 large Red Bell Pepper, long thin slices

2 Tbsp. Sugar

2 Tbsp. Light Soy Sauce

2 Tbsp. Vegan Stir-Fry Sauce

1 Tbsp. Vegetable Stock


Directions:

In a wok over medium heat, add the oil, and when it’s hot, add half of the basil leaves and fry them for 2 to 4 minutes, or until crispy.  Remove them from the oil, and drain them on paper towels and set aside.


In the name oil, fry the tofu for 3 to 5 minutes, until light brown, then remove and drain on paper towels.


On high heat, heat a little oil and toss in the red bell pepper and stir—fry for 3 to 5 minutes.  Add in the garlic, chilies, and shallots and cook for another 3 to 5 minutes.  Add the tofu, light soy sauce, sugar, stir-fry sauce, and vegetable stock and stir-fry for another 3 to 5 minutes.


Stir in the remaining basil leaves, and transfer to a platter, garnishing with the crispy basil leaves and serve with rice.
