Spicy Basil with Chicken II Recipe
This is a great Thai dish, basil has a fantastic flavor. The Thai name is Gai Pad Bai Ga-Prow.
Ingredients:
3 Garlic Cloves, minced
12 mixed Green and Red Jarapeno Peppers
2 tsp. Shrimp Paste
1 Tbsp. Oil
2 Lemon Leaves, thinly sliced
1 lb. Chicken, minced
1 Cup Thick Soy Sauce
1/4 Cup Fish Sauce
1/4 Cup Oster Sauce
2 Tbsp. Sugar
1 Bunch Basil Leaves
1 Cucumber, sliced
4 Eggs, fried over hard
Directions:
In a mortar and pestle, place the garlic, peppers, and shrimp paste, until a paste is formed.
In a large pan over medium-high heat, add the oil, garlic paste, and lemon leaves and stir-fry for 1 minute.
Add the minced chicken and cook for 10 minutes. Then add the thick soy sauce, fish sauce, oster sauce, and sugar and cook until the sauce is reduced. Toss in the basil leaves and top with cucumber.
Can be served with egg.
