Pad Thai with Shrimp Recipe


Shrimp is definitely a great meat choice for this popular Thai dinner.


Ingredients:

8 oz. Rice Noodles

3 Tbsp. Tamarind Paste

2 Tbsp. Vegetable Oil

3 Tbsp. Sugar

1 Tbsp. Pickled Radish

1/3 Cup Water

1 Egg, beaten

1/2 lb. Shrimp, cleaned and shelled

3 Tbsp. Fish Sauce

2 oz. Scallions, cut into 1/2” pieces

1 Bunch Bean Sprouts, coarsely chopped

2 Tbsp. Peanuts, finely chopped


Directions:

Soak the rice noodles in water for about 20 minutes, and then drain in a colander.  Soak the tamarind in hot water until it’s soften if using dried.  Force as much of the tamarind/water mixture through a sieve to remove and bits of bark.


In a wok, heat the oil and add the tamarind sauce, sugar, and pickled radish and stir-fry.  Add the noodles, a little at a time, and add the water, mixing well.


Chop up the noodles with a spatula to separate them, and toss them to coat well.  Add the beaten egg and mix in with the noodles.  Add the shrimp and fish sauce, mixing and cooking thoroughly.


When the shrimp are pink, you’ll know it’s done.  Add the scallions, sprouts, and peanuts, mix well and turn off the heat.  Letting it stand for a minute before servings.
