Green Curry with Tofu Recipe
This is a great authentic Thai recipe.
Ingredients:
1 1/2 Cups Water
1 Cup Uncooked Basmati Rice, rinsed and drained
3 Tbsp. Sesame Oil
1 (14 oz.) package Firm Tofu, drained and cubed
1/4 tsp. Salt
1 (10 oz.) can Coconut Milk
2 Tbsp. Green Curry Paste
Directions:
In a pot, add the water and stir in the rice, bringing it to a boil. Cover the pot and reduce the heat, letting it simmer for 20 minutes, then remove from heat and fluff the rice with a fork.
In a wok over medium heat, heat the sesame oil and stir in the tofu, cooking for 20 minutes until lightly browned. Season the tofu with the salt. Remove the tofu from the wok.
Bring the coconut milk to a boil in the wok, and mix in the green curry paste, then reduce the heat and let it simmer for 5 minutes. Drizzle over the tofu and rice.
