Green Curry with Chicken Recipe
Served with rice and vegetables this Thai dish is very common and quite popular.
Ingredients:
1/3 Cup Green Curry Paste
1 can Coconut Milk
2 Chicken Breasts, cut in bite size pieces
1/2 Green Bell Pepper, chopped
1/2 Red Bell Pepper, chopped
1 Carrot
1/2 Onion, diced
1/2 Cup Eggplant, sliced into bite sized pieces
1/2 Cup Bamboo Shoots, sliced into strips
2 Cups Water
1 Tbsp. Sugar
1 tsp. Salt
1/2 Cup Fresh Basil
Directions:
In a small saucepan on medium heat, pour half of the can of coconut milk in, adding the green curry paste once the milk starts to boil. Stir for 2 minutes, then add 2 cups of water and turn the heat up to high.
Once boiling again, add the chicken and let it simmer until the chicken is cooked through. Then add the carrot, onion, eggplant, red and green bell peppers, and bamboo and bring it back to a boil.
Add the rest of the coconut milk, the salt, and sugar and let it simmer for 2 minutes. Add the fresh basil and you’re ready to serve over rice.
